Makes about 2 dozen
11 Tbsp butter, softened
1 c. brown sugar
1/2 c. granulated sugar
1 tsp vanilla
1 tsp baking soda
1 tsp cinnamon
2 1/2 c. flour
1/2 c. semi-sweet chocolate chips
1 c. mini marshmallows
3 regular sized Hershey's bars, broken into pieces
1-2 packages graham crackers
Directions: In a medium bowl whisk together the flour, baking soda, and cinnamon. Set aside.
In a separate mixing bowl cream together the butter and both sugars. Add the eggs and vanilla. Next add the flour mixture to the butter mixture and combine on low speed. Finally fold in the chocolate chips and marshmallows. Chill in the fridge at least one hour.
Preheat the oven to 375 degrees F. Lay out graham cracker squares side by side on a cookie sheet as close as possible (they should be touching). Using a medium sized cookie scoop, place one scoop of the dough on each graham cracker (about 2 Tbsp). Flatten the dough down slightly with your fingertips.
Bake for 7 minutes then remove from the oven and press a Hershey's piece onto each top. Place back into the oven for 3-5 more minutes or until the edges are turning golden brown. Then gobble them up!!
